Usually when I got a server, I got it with mirrored drives for the operating system and then a raid array for the drives with the data. If I am getting a new server, that I intend to virtualize servers on it, do I skip the mirror part and just use the raid array? That is what I am being told and would like to verify.

that's not a bad strategy if you are sticking with Direct Attached Storage (disks in the server as opposed to some kind of SAN).  RAID 5,6,10,50 are likely all good candidates.

You can also consider both SAS and Nearline drives. 

Another option is to boot the embedded version of your Hypervisor from an SD card - I know some of the Dell servers support this.
